Key Lime Tart

a nice, light, summery treat in the dead of winter…it’s a must
Key Lime Tart
11/4 c low fat graham cracker crumbs
1/4 c unsweetened applesauce
14 oz can fat free sweetened condensed milk
3 oz low fat cream cheese, softened
1 tsp grated lime zest
1/2 c fresh of bottled lime juice
1/4 tsp almond extract
2 c fat free frozen whipped cream, thawed in fridge
1 medium banana, thinly sliced
1/2 c pineapple chunks
1 medium mango, sliced
Preheat oven to 350F. Lightly spray pie pan with cooking spray. In bowl mix graham cracker crumbs with applesauce. Press into pie pan with piece of plastic wrap to avoid sticking to hands. Bake for 8 minutes until toasted. Cool on rack.
In another large bowl mix condensed milk, cream cheese, lime zest, lime juice, almond extract until smooth. Fold in whipped topping until blended. Spoon mix into pie crust and smooth top. Cover and refrigerate for at least one hour. Arrange fruit on top into a pretty display 🙂 Serve and enjoy!
