Easy Rhubarb Crisp
With the help of my dad I planted my very own rhubarb…..

It may not look like much but it’s the start of something good I tell ya.

at least it has gotten plenty of TLC…maybe a little too much
Even though you are making a yummy dessert with rhubarb, the plant itself offers lots of nutrients including vitamin C, fiber, and calcium.

Strawberry-Rhubarb Crisp

Easy Strawberry-Rhubarb Crisp
similar to “Easy Rhubarb Crisp” but with Strawberries!

Ingredients for rhubarb:
3 1/2c cut up rhubarb
3 1/2c cut up strawberries
2T flour
4 eggs
1 & 1/3 c evaporated cane sugar or regular sugar (can use half Stevia)

Instructions:
Beat eggs, add flour, rhubarb, and sugar. Mix ingredients. Pour into sprayed baking pan.

Ingredients for crisp:
3/4 brown sugar
5 T soft butter
1/2 c flour
1 c old fashioned oats
Instructions:
Combine brown sugar, soft butter, flour and oats. Sprinkle over top of rhubarb. Bake 45min at 350F.

top with DQ reduced fat ice cream (J and I’s favorite) or whipped cream

Leigh’s visit & Coconut Chicken Spinach Salad

My good pal, Leigh, came to visit me last night! Wahooo!
As soon as we say “hi” the conversation does not end….into the night we chatted away over good food and wine.
First, though, I dragged her to track practice so she could help our Solon high jumper since Leigh jumped at ISU! -Thanks Leigh!

Dinner:
We share the same passion for wholesome food (she’s a dietitian too…what do you expect), so for dinner we dished up fresh colorful spinach salads with all the fixins.

Gorgeous! Look at all the color aka nutrients. I love salads because they are such an easy way to fill up on nutrient dense foods.

Breakfast:
eggs seasoned with Fox Point (Penzeys spice)
Whole wheat fruit and nut bread from South Union Bakery (Des Moines)

w/ homemade rhubarb strawberry sauce

Strawberry Rhubarb Sauce is so simple to make. Just bring to a boil sliced rhubarb and strawberries. Add sugar to taste and simmer away till it reaches the consistency you desire.

Ingredients for crisp:
3/4 brown sugar
5 T soft butter
1/2 c flour
1 c old fashioned oats
Instructions:
Combine brown sugar, soft butter, flour and oats. Sprinkle over top of rhubarb. Bake 45min at 350F.


Viola! So easy…so good!

BBQ Season!

To kick off BBQ season the family got together for Emmerson’s (niece) 1st track meet followed by a food feast.

The menu: lots of lean meat…
Mom made chicken burgers
Bryan and Matt cooked up a wild turkey they hunted that morning
Dad grilled elk burgers (elk from Matt’s hunting season last year)
4 bean salad with edamame

turkey was marinated and cooked in beer, brown sugar and other seasonings…how could it not be good?

Elk burgers grilled to the utmost perfection
Chicken OR Turkey Burgers
This is a little shorten version…
In a large skillet with 1/2 c olive oil saute 1 onion chopped, 1 celery finely chopped and 1 carrot finely chop or grated. Add 1 minced garlic clove (optional).
Remove from heat and place in large bowl to cool to room temp.
Sprinkle some sea salt and ground black pepper in with the veggies.
Add 1.5lbs to 2lbs ground chicken of ground turkey breast to bowl of veggies.
Add 2t dry dill weed and 1t poultry season (Mom just used salt and pepper).
Mix well, score into 4 to 6 patties.
They are messy to make so be sure you have a plate or something to put them on.
Get 1 to 2 T oil very hot in the skillet, add the patties and turn down heat.
Turn as soon as they brown…they crumble easy so be careful.
When they are pretty much done, take out of pan, add 1/2 c. bottled BBQ sauce to pan (or make your own…see BBQ Pizza recipe).
Put the patties back in pan over BBQ sauce and simmer.
Place a slice of sharp cheddar cheese on top. When melted put on buns (English muffins or sandwich thins) and serve.
Rhubarb crisp…love it!
